Recette de spaetzle fromage avec Le Moulin

Les spaetzle ou spätzle sont des pâtes aux œufs typiques dans le sud de l’Allemagne et en Alsace-Lorraine. Ces petites pâtes biscornues sont appelées ainsi car elles font penser à un nid d’oiseaux lorsqu’elles sont dressées dans une assiette. En effet, le nom spätzle provient d’un mot souabe signifiant moineau !

Comment former les spatzles ? Nos 2 techniques :

• A l’ancienne avec la technique du schaben : placez votre pâte sur une planche et découpez des lanières fines avec un couteau.
• Avec la technique du reiben : à l’aide d’une râpe à spaetzle spécialement conçue pour cela ! Les spaetzle auront tendance à être plus courts avec cette technique.

Pour les cuisiner, on vous propose de réaliser un gratin de spaetzle au fromage. Pour cela rien de plus simple : de bons spaetzles maison (ou pas !) réalisés avec les farines Le Moulin et du bon fromage de notre fromager artisanal. Tout cela livré directement chez vous !

Les étapes de la recette de spaetzle au fromage

1. Dans un saladier, battez les œufs avec le lait et le sel
2. Ajoutez petit à petit la farine jusqu’à obtenir une pâte homogène
3. A l’aide d’une râpe à spaetzle ou d’un couteau, taillez les pâtes en lanières
4. Dans une marmite, portez à ébullition de l’eau salée
5. Plongez vos pâtes dans l’eau bouillante, quand les spätzle remontent à la surface ils sont cuits !
6. Dans une poêle, faites revenir les oignons dans du beurre ou de l’huile jusqu’à caramélisation.
7. Facultatif. Vous pouvez aussi faire revenir les spaetzle quelques minutes si vous le souhaitez
8. Dans un plat allant au four, faites une couche de spaetzle, une couche d’oignon, une couche de fromage râpé. Répétez cette opération autant de fois que nécessaire.
9. Cuire au four à 180°c pendant 10min
